Toyama’s Trout Sushi

A unique Toyama speciality, masa-no sushi or trout sushi is made up of a layer of pink trout on top of Toyama’s delicious, sweet koshihikari rice, then wrapped in bamboo leaves. In the early 1700s, this trout sushi was offered to the shogun Tokugawa Yoshimune who is said to have loved it immensely. There are more than thirty specialty shops in Toyama, all with their own unique take on this popular classic.
